He recently presented at an international conference on encapsulation of flavors for confectionery applications in Sion, Switzerland and the upcoming symposium in San Antonio, TX(http://impascience.eu/bioencapsulation/2011_San_Antonio/) as part of the European Bioencapsulation Group industrial workshop. He is co-organizer of an annual

Dr. Meyers has over 20 years experience in the development of hydrocolloid applications including a patent on improving oil reduction in fried foods using pre-hydrated cellulosics (HPMC). He is the author of a chapter on the functionality of hydrocolloids in batter coating systems in the AACC Book "Batters and Breadings in Food Processing"
Dr. Meyers has worked on hydrocolloids in technical services for Dow Chemical, Rhodia Foods (now Dannisco) and applications for Wrigley (edible films) and M&M/Mars (pet foods).
He is well connected in the hydrocolloid and gum industry and can provide recommendations on the best thickening and performance systems for your applications.
Dr. Marc A. Meyers has experience in a number of Expert Witness cases for law firms looking for expertise in patent infringement, validity and formulation review.
